Elegant Chardonnay

Ntsiki Biyela grew up in rural KwaZulu-Natal, a province on South Africa’s eastern coast. In 1999, she won a scholarship to study winemaking in Stellenbosch—and started Aslina in 2016, named after Biyela’s grandmother. There’s a mineral buzz to this chardonnay, with plenty of salinity and soft orchard-fruit complexity—pear compote and blonde, unspiced apple butter. Sourced from vineyards in Stellenbosch and Elgin, it’s energetic stuff with a measure of elegance and restraint, and only seems to broaden with a day of air, that core of brightness lasting at the center of the wine.
