This is mourvèdre at its most lush and elegant. It sends a vast sweep of flavor across the palate, the velvet blackness holding a core of earthy, animal flavor that’s charged with energy. Diane de Puymorin makes it from the fruit of her oldest mourvèdre vines, 80 to 100 years old, with 10 percent syrah, and ages the wine in oak for a year and a half. As it takes on air, the flavors unfold, revealing a sanguine complexity and palate-whetting salty minerality.
