Usually, when a wine’s sting of acidity reminds me of cold steel, it’s not a good thing. In this case, that acidity sings on the palate with a piercing clarity, the wine as riveting for the sensation it creates on the palate as for the sweep of flavors it offers. Those flavors build from chalk to orange rind and butterscotch, lasting on fresh nutmeat savor. Then the energy of the wine seems to add light and air into the flavors, sustained in a cloud of jasmine and ethereal floral notes. It leaves the mouth completely cleansed, even as the taste continues to build, as if the wine had four dimensions, including time.
