You’ll find few sparkling wines drier and more racy than the Pashey line of sparklers from Trisaetum’s James Frey. This blanc de blancs of chardonnay, from the Ribbon Ridge estate in Oregon, is as lean as it gets, sharp and lemony, with lemon, apple, and breadcrust scents marked by a live wire of citrusy acids.
