A rich black-currant essence of cabernet, this starts out firm and dry before expanding with air into cool depths of fruit and wood spice. It grows vibrant and lovely, while still holding to its umami savor. Estate-grown at the Horgans’ Stevens Road vineyard west of town, this is a ripe and spicy red to pour with grilled pork in a Southeast-Asian sweet-and-sour marinade.
