Master distiller Carlos Camarena at the La Alteña distillery uses only estate-grown blue agave from the Arandas highlands of Jalisco for Tapatio’s 110 Blanco. It displays the vegetal characteristics that are a hallmark of highland Tequilas: Think fresh herbs, shiitake mushrooms, roasted oranges and a touch of sweet cinnamon spice. Handle it like you would an overproof whisky—carefully and with water, soda or, at least, ice.
