

The grand tradition of sipping eau-de-vie or schnapps after dinner may have been mostly replaced with aged spirits or coffee, but the kirschwasser that Thomas Hale distills might make you reconsider. The Yakima-based distiller makes the best of Washington’s stellar cherries, using only Tieton cherries he sources from a nearby orchard. His brandy captures the essence of the fruit, accented with cherry chocolate and frangipane-like flavors.
