At Bar Ramone, a cozy 80-seater in Chicago’s River North—the first wine bar in Lettuce Entertain You’s 120-restaurant portfolio—longtime wine pro Ryan Arnold set out to create a list that would inspire conversation. To that end, he and sommelier Richard Hanauer built a list of 100 picks, few of them household names. Want sparkling? Choose between Txakolina, Tony Soter’s Oregon Brut Rosé or Champagnes from the likes of Bérêche & Fils and Caville Savès. Explore lesser-known quarters of France, like Saumur (Domaine Guiberteau Brézé Les Arboises), or go big with a Barolo or a 1982 Montevertine Le Pergole Torte. While there are a smattering of Australian and US bottles, the list skews Old World, to go with the Spanish-focused small bites from chefs Hisanobu Osaka and Doug Psaltis. Arnold’s current go-to recommendation: the 2016 Wieninger Gemischter Satz paired with patatas bravas.
