The Los Angeles branch of this NY-based restaurant is set in the historic Bank of Italy building, an opulent space of marble, wrought iron and velvet. Chef Chris Flint broadens menu notions developed by NoMad’s founders, Daniel Humm and Will Guidara, with a California bounty of ingredients—bucatini tossed with urchin, or burrata with radishes and citrus. In addition to compiling an A-list of Champagnes, beverage director Ryan Bailey, a New York transplant, scours auctions and collections for odd vintage offerings. He’s also jumped feet-first into the California scene, with one of the deepest selections of Santa Barbara wines in the US.
