Lamb Tartare with Smoked Yogurt
Michael Salyer, the owner of the Napa tapas restaurant Zuzu, has extended his exploration of Spanish food with La Taberna, just two doors over. Here he presents an everchanging array of Basque-inspired pintxos, ranging from fried pork belly to salmon crudo to lamb tartare. They find plenty of flattering partners among the wines available, from Sherries and bright, effervescent Txakoli to richer albariños and brooding reds like the 7 Fuentes Listán Negro from the Canary Islands.
