The first Fundamental opened in Westwood, where it served as a veritable oasis in a part of town not known for adventurous menus. A second, in DTLA, opened in 2017. Both specialize in thoughtful comfort food like Jidori chicken, smoked duck breast with braised fennel, and steak tartare with black-garlic aioli. But the real draw is Alicia Kemper’s wine list, which is French heavy and studded with vins de France from wineries that go their own way. Her selection of grower Champagne is among the best in town, as is her section devoted to Sherry and Madeira—a dozen offerings between them available by the glass.
