When Beacon Tavern opened, just a block off of Chicago’s Magnificent Mile, beverage director Jon McDaniel wanted to banish any worries about the outrageous wine prices often associated with that pricey turf. “So often guests buy the second least expensive bottle on the list. I wanted to remove price from the equation,” he says. So he aligned all the bottles at $49, searching out deals like Red Tail Ridge Riesling from New York’s Finger Lakes and nebbiolo from La Kiuva in Italy’s Valle d’Aosta. For those who want to upgrade their wine choices, he’s also assembled a list of $49 half bottles, where you’ll find William Fèvre Montmains 1er cru Chablis and Vietti Castiglione Barolo. Heck, order both: Guests ordering two half bottles get a 20 percent discount on each. Or check out the “Cabinet Collection” of special reserve wines priced at $25 for 3 ounces, $45 for 6, or $175 per bottle. Krug Grand Cuvée at retail pricing, anyone?
