Matthew Kaner, Dustin Lancaster and David Gibbs opened this wine oasis in 2014 on a vacant-after-dark stretch of Ventura Boulevard. It’s devoted to older bottlings, whatever they might turn up in their frequent foraging expeditions, snatching up wines from local collectors, vetting and then serving up what they find. So yes, there’s a bit of randomness to the evening’s chalkboard offerings: You never know what you might get, but you can bet it’s been well cellared and it’s well priced.
