You’d be forgiven if you went to 71Above just to take in the view: The restaurant is on the 71st floor of the US Bank Tower, the city’s tallest building. Chef Vartan Abgarian’s coursed menu is far better than it needs to be, and Catherine Morel’s wine list is also designed to divert your gaze. It’s classical in form (think verticals of Bond and Quilceda Creek), with eccentric filigree, like the Paso Robles falanghina from Giornata, or, in a nod to the chef, an Armenian voskehat blend from Yacoubian-Hobbs.
