- 2 oz Hayman’s Old Tom Gin
- ¾ oz lemon juice
- ½ oz 1:1 simple syrup
- ½ oz Nux Alpina Walnut Liqueur
- 1 egg white
- “Dry shake” ingredients without ice in a shaking tin to incorporate everything, then shake with ice and strain into an all-purpose coupe.
- Dust half of the top of the cocktail with beet powder and hold the coupe by its base while spinning the top clockwise to give it a yin spiral.
