Stay Up Late

In the final round of the New York regionals, I was asked for a gin cocktail that was long and refreshing. I decided to go with a Stay Up Late, a Tom Collins variation from the 1946 Stork Club Bar Book.


Ingredients —

1½ ounces gin
½ ounce Cognac
¾ ounce lemon juice
¾ ounce simple syrup
soda water

Instructions —

Add all ingredients (except soda water) to a tin and shake with ice. Strain over fresh ice in a Collins glass and top with soda. Garnish with an orange slice and a cherry.
