Bridges & Bourbon takes its name from an enduring Pittsburgh symbol and a signature spirits collection. In this downtown bar, proprietor Scott Shaffer and his partners have assembled 150 (and counting) Bourbon labels, which they show off in flights. Just as tempting, however, are the cocktails, wild combinations that reference the season as well as science in their makeup. Take, for instance, The Bull, a summertime cocktail incorporating tomatillos, strawberries and sweet corn in a mezcal base; or the Sleepy Hollow, a fall offering that combines Bourbon with bacon, pumpkin and pasilla chiles. The Appalachian Trail, a bar staple served nestled in smoldering wood chips, changes with the seasons: last summer’s mezcal, black tea and blackberries made way for Cognac, apple and cinnamon flavors when the weather cooled. Either way, it makes a terrific campfire companion for chef David Racicot’s hearty onion-smothered burger, even if your usual temptation is a glass of Napa cabernet.
