Forget the roast duck, even if it’s the reason Beijing-based chef DaDong opened a 400-seat restaurant off Bryant Park: For the money, the Chilean sea bass, showered in garlic cloves and pink peppercorns, is a better bet, and allows more excuses to take advantage of all the Burgundy and Champagne Michael Scaffidi has packed into his wine list. Organized by the Chinese Zodiac, it favors Year of the Rooster vintages this year (such as 2005 and 1993), as well as plenty of fascinating matches for wagyu beef fried rice.
