“Still one of the fairest priced lists in the Bay Area,” says Jeremiah Morehouse, MS, wine director at Gary Danko. Opened in 1998, Absinthe serves French bistro fare that’s more hearty than nouveau, tending toward classics like duck-liver mousse and coq au vin. They started amassing Burgundy verticals before prices went stratospheric, and still have scores of perfectly mature bottles for less than $200.
