Opened in 1998, Absinthe serves French bistro fare that’s more hearty than nouveau, tending toward classics like duck-liver mousse and coq au vin. They started amassing Burgundy verticals before prices went stratospheric, and still have scores of perfectly mature bottles for less than $200.
