On chef Jason Fox’s $80 tasting menu, a dish that might seem simple on paper—corn, scallops, herbs—turns out to be an alchemical synthesis you could never have imagined. Wine director Francesca Maniace has created a Eurocentric list that flows seamlessly with the menu. Her pairings might include an Austrian grüner, followed by a rosato from Abruzzo and a Spider Chase Bordeaux-variety blend from Sonoma’s coast.
