In a follow-up to the highly acclaimed oyster-and-absinthe bar Maison Premiere, Krystof Zizka and Joshua Boissy recently opened Sauvage, a large-windowed space overlooking Greenpoint’s McCarren Park. Bar director Will Elliott focuses on low-alcohol cocktails to enjoy throughout an afternoon spent at the long white marble bar, while Zizka concentrates on wines from small vignerons in the Loire, Burgundy and Champagne to pair with chef Lisa Giffen’s French-influenced food. Go for oysters and a glass of Laherte Frères Champagne; stay for the leek terrine and de Moor Aligoté.

Caitlin Griffith knew her future career would entail food and drink when, at the age of six, she munched an anchovy from her father’s Caesar salad thinking it as a small strip of bacon—and was more than pleasantly surprised. While enrolled in New York University’s Food Studies program, she learned the secrets of affinage in the caves of Murray’s Cheese.
