Jeff Weissler left a wine career in New York to move to Oregon and launch consciouswines.com, a website dedicated to sustainable wines. Now he’s opened Pairings Portland Wine Shop, the city’s only shop devoted to natural wines. In a corner space in Northeast Portland, he’s stocked the shelves with bottles he describes as “vital choices for palate and planet.” For him, that means producers like Catherine et Pierre Breton and Cowhorn Vineyard & Garden, small-production, natural and organic. He takes an organic approach to organization as well; rather than clustering wine by region or variety, he groups it by favorite foods (sushi; shepherd’s pie), books, episodes of “Portlandia,” mood. For an evening of Bach or Beethoven, there’s Brick House Vineyards gamay noir; for late-night disco, he suggests Bugey-Cerdon. Weissler also often cracks open a few bottles and sells wine by the glass to pair with eats from The Ocean, a funky food-hub of six mini restaurants conveniently located across the street.
