Milos might be the shiniest shrine to Greek cuisine Athens has ever seen. The gorgeous space on the ground floor of the new Athens Hilton opened this past spring, just in time for the summer Olympics. The third Milos from Costas Spiliades, who established Milos in New York and Quebec, the Athens Milos is the most astonishing, with soaring ceilings and a fish display the size of an entire market. Corporate sommelier Hervé Pennequin had a field day free from the red tape of US and Canadian wine shipping laws, and gathered a book-size portfolio of new names and old vintages from around the world, as well as every good Greek wine in the country. Prices are high, but there’s no fresher fish in town, and it’s expertly prepared. Book now for August; it’s already packed.
