On the premises of the Buffalo Trace Distillery is a brick warehouse for aging whiskey built by Edmund Haynes Taylor, one of the pioneers of Kentucky Bourbon. This historical brick warehouse is where yearly releases of Col. E.H. Taylor, Jr. whiskies are selected. This year’s releases are outstanding: The Small Batch, a blend of 7-year-old barrels, is redolent of burnt sugar, maple syrup, orange and spice. The Single Barrel comes from a selection of 11-year-old barrels, each bottle containing the whiskey from one single barrel instead of a mix. The extra time in wood gives the spirit deep aromas of spice, roasted nuts and candied apples, while the flavors move toward roasted apple, with a warming cinnamon heat and an almost Scotch-like salinity.
