Fifty London is, like most places worth visiting in London, technically a members-only club. But if you're a fan of the world's rarest Cognacs, you'd be wise to call in any favor you can to gain access. Behind the bar, Salvatore Calabrese, formerly of the Library Bar at the Lanesborough, has reassembled his trademark cache of rare Cognac. The basic list features about 30 Cognacs, culminating in Hennessy Timeless (US $752), while high rollers peruse the reserve list marked by historic vintages like 1789, the year of the French revolution (if you have to ask...) Calabrese also mixes his favorite spirit with creative abandon. Cognac meets fresh garlic and apricot brandy in the Garlic Affair. And Sal's Sinner is a twist on the Stinger, with a shot of Tabasco. Perhaps most seductive is the Godfrey, sort of a blackberry Sidecar, adding warmth and depth to the classic cocktail.

Rockwell is for Bourbon aficionados dreaming of a pilgrimage to Kentucky - by way of London. The spacious lounge, located in The Trafalgar Hilton, offers panoramic views of bustling Trafalgar Square, settle-for-the-night leather club chairs, and an assortment of over 100 Bourbons and American whiskies - many, ironically, unavailable in the US. Sample them neat; in a creative cocktail featuring, perhaps, sweet potato juice or hibiscus tea; or in organized flights of five whiskies, such as "Vintage" and "Wheated."
