Stonehill Tavern is chef Michael Mina's latest venture, tucked into the St. Regis at Dana Point. It may be a tavern, but its commitment to wine is evident as you enter a 12-foot transparent wine display. The menu finds Mina exacting as usual in his execution, but a little more relaxed: you can enjoy signature dishes like his tuna trio to a James Brown soundtrack. Rajat Parr gathered a mere 500 bottles for the wine list-small for him-but with his usual accent on Burgundy and his trademark Wines of Consequence: unusual and well-priced bottlings like Nora Albariño or the Barossa grenache from Betts & Scholl.
