Sang Yoon’s Culver City bistro is a riot of southeast Asian influences, from southern China to Singapore, but its menu is arguably built around and for Champagne, the chef’s favorite beverage; the list often carries wines from his personal collection. It’s also strong in German riesling and high-acid reds, and especially deep in Beaujolais.
