A quintessential upstate college town, Ithaca is vying to be the gateway to Finger Lakes wine country. The deal may be sealed with the opening last December of this big, airy restaurant near the central Commons. The eclectic menu is all about local sources, down to the grains and wild yeasts in a playful array of flatbreads coming out of the brick oven next to the bar. Thirty wines by the glass are all from the Finger Lakes and nicely cherry-picked, while the full list is judiciously international. There’s a fine selection of New York beers, too. Tompkins Cortland Community College opened Coltivare as part of its Sustainable Farming and Food Systems academic program, and supplies produce from its own organic farm.
